    This Thansgiving was different and fun !!!!
    DAIRY FREE CORN
    CASSEROLE
    1 can kernel corn, slightly drained
    1 can creamed corn
    1 cup tofu sour cream
    1 box Jiffy cornbread mix
    ( this is dairy/egg free)
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 garlic powder if desired.
    MIX well.
    ADD 1 stick of melted earth balance “butter”
    Not over mixing.
    BAKE at 350* for 50 to 60 minutes in a greased 9″ 2 quart casserole
    The center should be set and top lightly browned.
